Method
Cut the vegetables into the desired size or shape, place in a bowl and sprinkle with salt. Mix well. Let the salted vegetables soak for about 1 hour.
Make vinegarbase: Mix water, condimento bianco and cristallino cane sugar in a bowl. Add the vegetables to the vinagar base and mix well. Let it rest for 12 hours. To serve, pour off the vinegar mixture and plate. The vinegar mixture can be used several times.

- 75 g Rapunzel cristallino cane sugar
- 125 g Rapunzel Condimento Bianco
- 300 g Water
- Different kind of veggies: Carrots, cucumber, lotus root, cauliflower, radish
- 10 g Rapunzel sea salt with iodine
