Vegetable sauces – from the sun directly into the jar
Our sauces taste so wonderfully fruity because the sun-caressed tomatoes are processed and canned direcctly in Italy immediately after the harvest. Enjoy this incomparable, Mediterranean culinary indulgence!

For our sauces we use neither thickeners nor flavor enhancers.
And the savory, fresh aroma? The great taste simply comes from the select ingredients.
As good as it gets!
Regardless if traditional basic sauces, tomato paste in the jar or in the tube, or ketchup in a squeeze bottle ... the Rapunzel tomato range includes many product variations made with Germany's favorite vegetable.
The tomatoes that we use for the production of Rapunzel tomato pastes and tomato sauces are grown in Italy. Long-term supplier relations guarantee transparency and top quality. The sun-ripened tomatoes are harvested and processed immediately. The harvest starts in July, but the main harvest takes place in August and September. In order to avoid having to harvest all tomatoes at once, our farmers grow early, medium an late-maturing varieties.
Our classical products such as the tomato sauces Familia, Toskana, Arrabbiata or Ratatouille are produced from freshly harvested tomatoes and are filled immediately into jars. This results in particularly fresh sauces, because we heat our sauces only one time. Our sauces contain a lot of tomato-own juice - giving them a homemade flavor. Moreover, they are very light which is typical for genuine Italian sauces.
Rapunzel passata is also made from fresh tomatoes at the beginning of the harvest season. The passata is filled directly into bottles. This preserves the fresh, fruity tomato taste.
Strong, creamy tomato sauces such as Olivia, Tradizionale and Ricotta are produced with passata or polpa. In this process, the already heated raw product is pasteurized a second time when the sauce is combined with the other ingredients in the jar.

Frequently asked questions about tomato products
Which tomato varieties are used for our tomato products?
In the EU, more than 2,300 tomato varieties are registered. The variety denomination distinguishes mainly between different tomato shapes: round, grooved, elongated and cherry tomatoes. For peeled tomatoes, mainly elongated varieties are used and for other products such as passata, polpa and tomato paste, round varieties are typically used. For Rapunzel tomato products, mostly the elongated Roma variety and the round Rio Bravo variety are used.
How long can opened tomato products be kept?
We recommend to always use a clean spoon for the removal of the needed portions, to reseal the product quickly and to store it in the refrigerator.
This way, tomato paste in the glass can be kept in the fridhe for about one week, tomato paste tubes can be kept even longer. Opened ketchup bottles can be stored in the refrigerator at temperatures below 8°C for up to one month if cleanliness is observed when the product is removed.
What is lycopene?
Tomatoes are known for their high lycopene content. Lycopene belongs to the carotinoid compounds and it gives tomatoes their chracteric red coloration. Lycopene is considered to be a radical scavenger. The availability of lycopene is greater in processed and heated tomato products such as tomato paste than in fresh tomatoes, because heating breaks open cell structures. This results in the release of lycopene.
What temperatures are used for the pasteurization of tomatoes?
Tomato paste is theickened at 70°C under vacuum until the desired dry mass concentration is obtained. After the filling process, the product is pasteurized at 94°C for 35 minutes. Tomato sauces are pasteurized at 92 - 96°C for 33 minutes.
How many fresh tomatoes are used for the production of tomato paste?
100 g tomato paste with 22 % dry mass contain approximately 360 g fresh tomatoes.
